Bright zucchini salad (raw)
Ever wondered what to do with zucchini peels after using zucchinis for a meal? Now you can turn them into an easy yet amaaazingly delish salad! I love the way the bright colour adds so much love to your plate too (on the bottom right in the pic). Relishing every meal on my trip so far!
Skins from 8-10 zucchinis (ideally light green variety, tend to be sweeter)
Dill,1 bunch, chopped
Olive oil, 4 tablespoons
Pomegranate extract 3-4 tablespoons
Garlic cloves, 6-8 pieces, pressed/ minced
Lemons, 1.5, juiced
Walnuts 6-8 chopped
Julienne all zucchini skins, and separate each piece by hand. Add chopped dill, place in serving bowl and set aside. It should look like bright green pasta!
Dressing: Place all other ingredients (except walnuts) together and whisk.
Pour dressing mix over zucchini/dill mix, add the walnuts, and toss.
