Rice, lentil, corn & avocado love
Latin Americans were pretty smart. They knew how to combine food to make it nutritionally perfect. They ate a lot of corn – on its own, not nutritionally sufficient – but always cooked it in lime and served it with beans, making it a perfect and complete meal. (Beans supply amino acids lacking in corn and lime makes niacin available.)
Although I’m not nearly as organized (or informed, yet) as the Latin Americans, I do try and serve up a variety of food on our plates every day. I don’t think you have to be stressed about trying to perfectly combine, but on a plant-based diet variety is key to get all the nutrients and calories your body needs. For me, colour is the best way to make sure you’ve got a good range – the more colour on your plate, the more nutritionally complete it likely is! That and – the more green, the better. Those are my simple ways to think about it anyway.
So here went the meal that ended up feeding everybody:
- Brown rice (pretty much a staple these days – 22 minutes in the Instant Pot! Buy one if you haven’t already, life changing!)
- Corn boiled with juice of 1/2 lime
- Green lentils, cooked in the Instant pot
- Avocado, sliced
- Tomato, sliced
- Broccoli, steamed
- Coriander/ cilantro – chopped up and sprinkled on top.
- Juice of 1/2 lime – squeezed on top
Just assemble on a plate (smiley face for little people!), and you’re done. This is so energizing you might just be tempted to hit the gym after eating! Or… crash on the couch. Whatever you’re feeling! Hope you enjoy.
