Massaged Kale Salad

Have you ever tried to eat raw kale?  The taste is a little bit bitter, the texture is chewy – not the most pleasant experience.  Enter a technique I just discovered (Thanks Rouxbe Plant Based Cooking Course!) — “Massage Your Kale.”  You can do it with a plain ripe avocado, or with the juice of a lemon and a bit of salt – I used them all.  You just add the ingredients together in a bowl, and massage them together, so the moisture is coaxed into the kale leaves.  It is kind of magical actually – the bitter taste and chewy texture of the kale is gone, replaced with a softer texture and mellow, buttery taste… a completely different eating experience vs. its raw form.  It actually tastes delicious!  I tried this a few ways – pics below start with the massaged kale and add some apple slices, raisins and walnuts.  This was nice!  But I tried another version today with some sunflower seeds and cherry tomatoes, wrapped in cucumber ribbons… this was amazing!  Easiest (and rather impressive looking) salad ever.  More pics will follow!

Here’s the biggest surprise… AYLA LOVED IT!  I never thought I could actually feed her kale with her knowing what she was eating, hence the beauty of green smoothies… But I was wrong.  She asked me if she could try it, and I tried to act all flippant, like, “I guess you can, but not too much…”… trying to cover my excitement.  And then “Mmmm!! Mommy can I have some more?” Whaaat?  Are you serious? I could not keep the leaves in the bowl… True story.  I should call this, Ayla’s Massaged Kale Salad… Give it a try and tell me what you think!
